Poverty Pasta

Poverty Pasta is a pasta dish that uses very basic, simple, cheap ingredients to create a hearty, filling pasta that can keep the family feeling full all through the night without breaking the bank. The filling and satisfying savory pasta is made with a whole pound of hot sausage that can make the sauce go a long way, which makes it ideal for freezing for later use. Italian seasoning, garlic salt, onions, coriander and bell peppers give the pasta the classic Italian flavor you’ve come to expect from your favorite pasta dishes.

Ingredients

  • 1 pound hot bulk sausage
  • 1 medium onion, peeled and chopped
  • 1 bell pepper, cored, seeded and chopped
  • 1 25 to 28 ounce can or jar of spaghetti sauce
  • ½ teaspoon garlic salt
  • ½ teaspoon Italian seasoning
  • 1 pound spaghetti, cooked according to package directions
  • Shredded Parmesan cheese

Directions

Brown the sausage in a large skillet over medium-high heat, breaking it up as it cooks.  Drain the sausage and set aside.  Add the onion and bell pepper to the skillet and sauté until wilted, about 5 minutes.  Return the sausage to the skillet, add the spaghetti sauce, garlic salt and Italian seasoning and simmer, covered for 20 minutes.  Serve over the pasta and sprinkle with the shredded Parmesan.

Makes 4 to 6 servings.
